Ingredients:
Pudding:
• 500 ml (2 cups) cake flour
• Pinch of salt
• 10 ml (2 teaspoons) baking powder
• 80 g butter or margarine, at room temperature
• 250 ml (1 cup) sugar
• 2 eggs
• 45 ml (3 tablespoons) apricot jam
• 15 ml (1 tablespoon) white grape vinegar
• 5 ml (1 teaspoon) bicarbonate of soda
• 1 can (380 g) Nestlé Ideal Low Fat Evaporated Milk
Sauce:
• 250 ml (1 cup) sugar
• 10 ml (2 teaspoons) vanilla essence
• 500 ml (2 cups) water
• 160 ml (⅔ cup) Nestlé Ideal Low Fat Evaporated Milk
• 100 ml Amarula liqueur
• 60 g butter
• Nestlé Country Fresh Vanilla Ice Cream
Method:
- Preheat the oven to 180°C. Grease a large ovenproof dish or 11 ramekins.
Pudding:
- Sift together the cake flour, salt and baking powder.
- Cream the butter and sugar and add the eggs one by one, beating well after each addition.
- Add the jam and vinegar and stir well. Dissolve the bicarbonate of soda in the evaporated milk.
- Add the flour and milk mixtures to the creamed sugar mixture and mix well. Turn into the dish or ramekins and bake for 30 minutes.
Sauce:
- Bring the ingredients to the boil, stirring continuously. Pour over the pudding as soon as it comes out of the oven.
- Serve with ice cream.
